I am going to share the very basic recipe for a delicious juicy Pakistani gulab jamun recipe.
Ingredients:
- Water 3 Cups
- Sugar 2 & ½ Cups
- Green cardamom 3-4
- Lemon juice 1 tsp
- Milk powder 2 & ½ Cups
- Semolina 3 & ½ tbs
- All-purpose flour 3 tbs
- Baking soda ¼ tsp
- Egg whisked half
- Oil 3 tbs
- Milk 200ml (¾ Cup)
- Oil for frying
- Edible silver leaves
- Pistachios sliced
Preparation
- In a wok, add water, and sugar & turn on the flame, mix well & let the sugar melt.
- Add green cardamom, mix well & cook for 1-2 minutes.
- Add lemon juice, mix well & set aside.
- In a bowl, add milk powder, semolina, all-purpose flour, baking soda & mix well.
- Add whisked egg, and oil (microwave for 30 seconds) & mix well until it crumbles.
- Gradually add milk & knead until soft & sticky dough is formed, cover & let it rest for 30 minutes.
- Transfer the dough to a clean working surface, grease your hand with oil, and knead & stretch the dough with the help of your palm until smooth and with no lumps (1-2 minutes).
- Now gather the dough, grease your hand with oil, take a small quantity of dough & make smooth balls of equal sizes. Make sure they have no cracks (makes 25-26).
- In a wok, add Kisan banaspati (add on low flame) and let it melt.
- Make sure the oil is not very hot, add gulab jamun balls & cook on very low heat until they float on the surface (stir wok in between), and continue frying on low flame until golden brown (8-10 minutes). Stir gently in between.
- Reheat sugar syrup and directly add gulab jamun in hot sugar syrup.
- Turn off the flame & let them soak in sugar syrup for 2-4 hours.
- Garnish with silver edible leaves, and pistachios & serve!
