Ingredients

You need to have the following ingredients to make this delicious mutton karahi:

  • 1/2 cup oil or ghee
  • 500g lamb or mutton, bone-in preferred
  • 600g tomatoes, finely chopped or pureed
  • 1 bulb garlic, minced
  • 1 thumb-sized chunk of ginger, minced
  • 2 tsp salt, adjust to taste
  • 2 tsp paprika or Kashmiri red chilli powder
  • 1.5 tsp black pepper
  • 1 tsp chilli flakes
  • 0.5 tsp cumin powder
  • 0.5 tsp coriander powder
  • 1 tsp onion seeds (kalonji), optional
  • 2 green chilies, slit in half (if desired)
  • 0.5 bunch coriander, chopped
  • Ginger cut into matchsticks, as desired

Recipe 

  • Heat oil or ghee in a pan over medium heat.
  • Add mutton pieces and let them get brown on all sides. Constantly stir the meat from time to time until it changes colour.  
  • Stir in minced garlic and ginger, mix it until it’s fragrant. Give this a quick fry.  
  • Add salt, paprika or Kashmiri red chilli powder, black pepper, chilli flakes, cumin powder, coriander powder, and optional onion seeds. Mix well.
  • Also add 2 to 3 cups of water and boil it. After boiling, turn the heat to low and cover it with a lid. Keep checking your karahi from time to time. 
  • Now your meat should be done by 80%. Now it’s time to add chopped tomatoes or puree. Let this cook on high flame but continuously stir your karahi.   
  • Cover and cook until the meat is tender and the oil separates from the gravy, stirring occasionally.
  • Add slit green chilies and chopped coriander, cook for a few more minutes.
  • Garnish with ginger matchsticks and additional chopped coriander, if desired.
  • Serve hot with naan or roti for a delicious meal. Enjoy!
